CHICORY SMOOTHIE!!!

Goooood monday morning !

Since it’s monday again it’s the perfect day to correct last week’s mistakes OR to just continue with being happy & healthy.
In short, it’s the perfect chance to start your week awesome and kick some ass. An awesome beginning makes a happy ending right?! Ok this wasn’t any shorter…, WTF! Soooo what do I have in store for you on this monday morning? Well…..(drum rolls please)….. A CHICORY SMOOTHIE ! wooohoeee!

I was having a chicory salad for dinner last week but I bought too much chicory and had some left over pieces. And I just got crazy and thought well, let’s throw it in the blender and we’ll see… Guess what…it turned out to be a super delicious smootie. YEEEESSSS!

Why so happy Suzanne xd? Well, because the chicory doesn’t taste that bitter in a smoothie as it does when cooking it or eating it raw in a salad. And ofcourse because delicious things that are healthy too are making me happy:) Say yay to trying new things!

The healthy part: Chicory has several medicinal properties and contains lots of vitamin C and potassium! Some extra potassium is needed in situations of extreme fluid loss (sweating for example during your cardio causes a loss of potassium) many athletes that practice endurance sports can therefor use some extra potassium that you can find in chicory for example. This nutrient is beneficial for the blood pressure and is necessary for a proper functioning of the muscles and nervous system. Besides that, the chicory stimulates the digestive system and helps to detoxify your liver. Your body will also absorb nutrients more readily due to the fibers in the chicory. And there’s more, chicory contains many minerals and just a few calories: only 2 calories per 100 grams. About the kiwi in short: Lots of vitamin C, antioxidants, potassium (again, because I could use some extra potassium after my 15 km run and gym workout!!), fibers and only 45 calories!

Ingredients:
100 g chicory (about 2 small, cleaned strumps )
1 kiwi
50-150 ml water (depending on how watery/solid you want your smoothie to be)

Recept:
1. Clean the chicory and cut it into small pieces
2. Peel the kiwi and cut it into small pieces too
3. Put it together in a blender / food processor, add some water and there you go
4. Enjoy your healthy smoothie:)

ps. Ofcourse you can variate and add ingredients such as an apple, or some quark. Or exhange the kiwi for a banana and an orange (must be a delicious one too!)

Enjoooyyyyy your monday, be happy and be healthy!
xxxxxxxx Suzanne
